I always feel I’m crazy busy. This occasionally leads to me eating horrendously unhealthy food, which is often expensive. My solution to that, is to have ingredients kicking around that I can turn into a healthy meal über fast.

Mozarella and tomato salad

Ingredients

119 g generic mixed salad (mostly lettuce)
72 g cherry tomatoes
129 g Mozarella cheese (20% fat)
60 g Cashew nuts
57 g Olive oil

Instructions

Mix everything together. Eat 🙂
